Smashed Avocado, Ham and Poached Eggs on Toast

Smashed Avocado, Ham and Poached Eggs on Toast

A quick and easy breakfast that'll make you feel like it's the weekend

Ingredients
  

Serves: 2 pax

  • 4 slices of toasted wholemeal bread
  • 1 avocado
  • Rocket or other desired type of salad greens
  • 4 slices of ham
  • 4 eggs
  • 1 tbsp white vinegar
  • 1 clove of garlic (minced)
  • 1/2 tsp salt
  • cracked black pepper
  • chilli flakes (optional)
  • olive oil

Instructions
 

  • Cut avocado in half length-wise. Twist the two halves to separate them. Remove the avocado pit.
  • Scoop out avocado flesh with a spoon into a bowl.
  • Add minced garlic, salt and some black pepper to taste. Mix together with avocado, until mixture resembles a paste.
  • Add white vinegar to a pot of water and place on the stove on medium heat. In the meantime, crack an egg into a small bowl.
  • Prepare a large plate with a piece of kitchen towel folded in half and keep ready next to the pot.
  • Once pot of water is simmering (i.e. just reaching boiling point, with water starting to bubble in the pot), stir the water with a spoon creating a swirl, then gently slip the egg out of its bowl and into the middle of the swirl.
  • Let the egg simmer until it looks opaque and poached as desired (should take no more than 5 minutes). Scoop out the egg with a large spoon and place on pre-prepared kitchen towels to soak up the excess moisture. Repeat process with rest of the eggs.
  • Spread avocado mixture onto slice of toasted bread, put on a handful of fresh rocket, top with a slice of ham. Place poached egg on top. Put a dash of olive oil on the egg.
  • (Optional) Garnish with cracked black pepper and red chili flakes.
