Pear and Arugula Salad

Awesome side dish or a great light lunch!

  • 100 g rocket/arugula
  • half pear, sliced thinly
  • 6 tbsp extra-virgin olive oil
  • 3 tbsp lemon juice
  • cracked black pepper, to taste
  • salt, to taste
  • 1/4 cup walnuts, broken into small pieces
  • half red onion, diced
  • parmesan (optional)


  • Put rocket/arugula leaves, red onion and walnuts in a large bowl.
  • Add olive oil, lemon juice, salt and pepper and mix well.
  • Serve salad with pear slices and desired amount of parmesan sprinkled on top. (For a light lunch option, add some meat, such as ham, roasted chicken or tuna).
